Eneko Atxa (Amorebieta, Bizkaia, 1977), chef at Restaurante Azurmendi, is a key figure in international cuisine.

Holder of three Michelin stars, he has made history in Bizkaia with his restaurant, located in the town of Larrabetzu, as the first to win the triple award.

A sharp mind cannot stop creating and skilled hands that work quickly, accurately and caringly. That is the magic of Eneko Atxa at Restaurante Azurmendi, and therein lies the secret of his international fame. Eneko's passion comes from the depths, from the most intimate of his being. Although he could never imagine such an outcome, the admiration he felt for homemade food in his childhood would mark his career forever.

Eneko Atxa was commissioned to inaugurate the Añana Salt Harvest in 2013. His relationship with Valle Salado and with the salt produced here is not new. Indeed, he considers Añana Salt as "a unique treasure, the oldest we have and a witness to our origins and history. He has been using it for years in his culinary creations, for its high quality and its gastronomic qualities. "It is an essential ingredient in the preparation of our dishes. Its supreme quality and unique features make it a key product in our cuisine", he stated.

Eneko Atxa also had words of praise for the project unfolding in Valle Salado. "The spectacular nature of this landscape, its exemplary recovery and particular salt production technique endow it with a unique value that must be disseminated around the world", he said.
