Salt production

Salt is the only edible stone that exists in nature. It is a vital product for the survival of humans and animals and, therefore, it has been considered as "white gold" since antiquity. Delving into the production system of Valle Salado leads to the discovery of the millenarian "know how" of salt making that the salt workers have developed over time using different techniques in order to improve the quality and quantity of salt.

During the visit, you will be able to see the unusual architecture generated for salt production purposes over thousands of years and the historical evolution of the production systems. But you will also witness how the salt from an ancient sea that existed 200 million years ago is transformed into brine, how it is distributed over the crystallization pans and what systems are used to store the liquid.

In addition, you will discover the importance of the sun and the wind in the traditional production process. The means and tools used to produce the various types of salt that are commercially available and how it is collected and packaged by hand.

We shall stroll through the salt farms belonging to the great chefs and institutions that cooperate with Valle Salado (Pedro Subijana, Martín Berasategui, Andoni L. Adúriz, Eneko Atxa, Joan Roca, Diego Guerrero, Dani García, Patxi Eceiza and the Basque Culinary Center).

Finally, we will have a salt tasting session, which will test your senses with a methodology specifically designed for your enjoyment.
