Visit the springs

The heart of the Salt Valley is, without doubt, at its southern end, where the lifeblood to the salt flats comes to the surface naturally, and where the arteries that, in the shape of wooden troughs, originate and distribute the precious liquid throughout the entire installation.

Only by going on this tour will you be able to see how the brine flows, mixed with bubbles, from inside the earth at the Santa Engracia spring and the systems that have been used by salt makers for thousands of years to deliver the precious fluid to the entire salt farm.

In addition, you will see the maintenance work. Keep in mind that restoring a facility of this nature implies using different types of building techniques characterized by the traditional nature of the installation rather than by its complexity.

Therefore, during the visit you will be able to witness the maintenance process based on the use of the same materials as those used since antiquity (stone, wood and clay) and on advanced systems used to make the restoration work sustainable so that it may also meet the needs of the twenty-first century.

Visit salt production facilities

Salt is the only edible stone and, because of its value, it was considered white gold in ancient times. Becoming familiar with salt production at the Añana Salt Valley will enable you to discover the ancient "know how" of salt making, which has evolved over time into products of the highest quality.

During the visit, you will be able to see the unusual architecture conceived for salt production purposes and the historical evolution of production systems. But you will also witness how the salt from an ancient sea that existed 200 million years ago is transformed into brine, how it is distributed over the crystallization pans and what systems are used to store the liquid.

In addition, you will discover the importance of the sun and the wind in the traditional production process. The means and tools used to produce the three types of salt that are commercially available (mineral salt, salt flower and salt stalactites) and how it is collected and packaged by hand.

Finally, we will show you the salt farms belonging to the great chefs who collaborate with the Salt Valley (Pedro Subijana, Martín Berasategui, Luis Andoni Adúriz and Eneko Atxa) and you may also enjoy a sample of the different types of salt we produce.
