year with the appointment of Aitor Arregi, the soul of the Elkano restaurant, as the new A\u00f1ana Salt Ambassador.<\/p><p>Aitor Arregi, at the helm of the legendary <strong>Elkano<\/strong> restaurant in Getaria, has transformed his family legacy and the grill into a universal culinary expression. His restaurant has a Michelin star and is ranked 24th on <strong>The World&#8217;s 50 Best Restaurants 2025<\/strong> list. Elkano&#8217;s approach is based on respect for the produce and the environment, in a direct connection with local fishermen, artisans, and producers. Grilling, the sea, and a deep understanding of the region are his language.   <\/p><p>The event, held at our salt mines, was attended by Ramiro Gonz\u00e1lez, the General Representative of \u00c1lava and President of the Valle Salado Foundation, who presented this award to one of the great exponents of Basque gastronomy. This gesture reinforces Valle Salado&#8217;s commitment to those who understand cuisine as a way of preserving the territory, its history, and its identity. <\/p><p>During his speech, Arregi spoke a few words that reflect the depth of his connection with A\u00f1ana:<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a27e52e elementor-widget elementor-widget-text-editor\" data-id=\"a27e52e\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>\u201cA\u00f1ana Salt is not just an ingredient.
