plus \u00e9mouvants de l&rsquo;ann\u00e9e avec la nomination d&rsquo;Aitor Arregi, l&rsquo;\u00e2me du restaurant Elkano, comme nouvel ambassadeur du sel d&rsquo;A\u00f1ana.<\/p><p>Aitor Arregi, \u00e0 la t\u00eate du l\u00e9gendaire restaurant <strong>Elkano<\/strong> \u00e0 Getaria, a fait de l&rsquo;h\u00e9ritage familial et du grill une expression culinaire universelle. Son restaurant est \u00e9toil\u00e9 au guide Michelin et class\u00e9 24e au palmar\u00e8s <strong>The World\u2019s 50 Best Restaurants 2025<\/strong>. L&rsquo;approche d&rsquo;Elkano repose sur le respect des produits et de l&rsquo;environnement, en lien direct avec les p\u00eacheurs, artisans et producteurs locaux. Grillades, mer et profonde connaissance du terroir sont son langage.   <\/p><p>L&rsquo;\u00e9v\u00e9nement, qui s&rsquo;est tenu dans nos salines, a \u00e9t\u00e9 accueilli par Ramiro Gonz\u00e1lez, d\u00e9put\u00e9 g\u00e9n\u00e9ral d&rsquo;\u00c1lava et pr\u00e9sident de la Fondation Valle Salado, qui a remis ce prix \u00e0 l&rsquo;un des grands repr\u00e9sentants de la gastronomie basque. Ce geste renforce l&rsquo;engagement de Valle Salado envers ceux qui consid\u00e8rent la cuisine comme un moyen de pr\u00e9server le territoire, son histoire et son identit\u00e9. <\/p><p>Lors de son discours, Arregi a prononc\u00e9 quelques mots qui refl\u00e8tent la profondeur de son lien avec A\u00f1ana :<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a27e52e elementor-widget elementor-widget-text-editor\" data-id=\"a27e52e\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>\u00ab Le sel d&rsquo;A\u00f1ana n&rsquo;est pas qu&rsquo;un ingr\u00e9dient.
