The main driving force in all areas of the Salt Valley is undoubtedly the production of high quality salt. The Añana Salt, considered as one of the best in the world, contributes to the maintenance of the simple salt structures, to the conservation of a “know-how” handed down for more than 7,000 years and, finally, to provide economic support to the project through its sale.
One of the great achievements of the Foundation is that it has been able to adapt the activity of Valle Salado to the XXI century, betting on a policy of sustainable production and quality of salt that our society, increasingly aware of the healthy values and fair market, has been able to understand. But the Foundation’s income comes not only from its sales in the markets, but also from the consumption of salt culture. That is why more than 80,000 visitors visit the corners of the salt pans every year, learning and enjoying this unique salt landscape in the world, becoming customers and prescribers of our salt.
The Añana Salt Valley Foundation is a non-profit institution that reinvests all profits from the sale of salt and visits in the recovery of the salt pans.
The Foundation also works to create a brand image that reflects the extraordinary quality of the salt. To this end, it relies on the selfless collaboration of some of the best chefs in the world, who endorse its properties by using it in their restaurants and lending their public image to the project, as well as national and international recognition. Among them, we can highlight that of Presidium product of the international Slow Food movement or the designation by the Food and Agriculture Organization of the United Nations (FAO) of the Añana Salt Valley as an Important System of World Agricultural Heritage (SIPAM).
For thousands of years SALT has been a basic product for the health and life of human beings, who have found more than 14,000 uses for the only edible stone. However, the decline in its price with the advance of industrialization has led to the demonization of this precious product, known since ancient times as white gold. Without any serious scientific basis, salt has been accused of being the cause of numerous health problems. Without taking into account that not all salts are the same and that without salt the human body cannot survive.
