Francis Paniego (Ezcaray, La Rioja, 1968) is one of the most promising Spanish chefs today. He is the chef of the two-Michelin-starred restaurant El Portal de Echaurren (Ezcaray, La Rioja) and the culinary director of the one-Michelin-starred restaurant at the Hotel Marqués de Riscal (Elciego, Álava).
Considered one of the standard-bearers of the new Riojan cuisine, Paniego won the National Gastronomy Award in 2011 in the category of “Best Chef.”
Francis Paniego’s relationship with Añana Salt began with the collaboration agreement signed in 2011 by the Añana Salt Valley Foundation and the Bodegas de los Herederos del Marqués de Riscal. This collaboration has resulted in the organization of joint visits to both the Salt Valley and the Marqués de Riscal Wine City and the development of innovative products, such as Wine Salt and Wine Flower Salt, both made with wine from the renowned Alava winery.
