The Añana Salt Valley has experienced one of the most exciting moments of the year with the appointment of Aitor Arregi, the soul of the Elkano restaurant, as the new Añana Salt Ambassador.
Aitor Arregi, at the helm of the legendary Elkano restaurant in Getaria, has transformed his family legacy and the grill into a universal culinary expression. His restaurant has a Michelin star and is ranked 24th on The World’s 50 Best Restaurants 2025 list. Elkano’s approach is based on respect for the produce and the environment, in a direct connection with local fishermen, artisans, and producers. Grilling, the sea, and a deep understanding of the region are his language.
The event, held at our salt mines, was attended by Ramiro González, the General Representative of Álava and President of the Valle Salado Foundation, who presented this award to one of the great exponents of Basque gastronomy. This gesture reinforces Valle Salado’s commitment to those who understand cuisine as a way of preserving the territory, its history, and its identity.
During his speech, Arregi spoke a few words that reflect the depth of his connection with Añana:
“Añana Salt is not just an ingredient. It’s a story, a liquid memory that crystallizes in every flake.”
After talking with the salt workers and learning about their work firsthand, he shared a reflection that connects people to the place:
“It’s the love of their work on the part of the salt workers and the locals that makes this condiment—salt—so important.”
“Everyone greets each other by name. There’s a sense of belonging, of loving the space you’re in.”
And he expressed a wish that goes beyond recognition:
“Hopefully, Añana will be a reference for other territories.”
With its incorporation into the Salt Ambassadors family, the ties between two unique cultural landscapes are strengthened: the sea of Getaria and the salty land of Añana. Two worlds united by respect for their origins, the value of traditional crafts, and the constant pursuit of excellence.
