Añana Salt Valley: A Millenary Tradition

We begin our journey in the oldest active salt mine in the world, the Salt Valley, where Añana Salt has been produced for more than 7,500 years. Here, you will discover the fascinating production process that uses only the sun, the wind and the millenary know-how of the salt makers. During the visit, you will not only discover its secrets, but you will also have the opportunity to taste the salt, essential in Basque cuisine, and explore the unique biodiversity of the salt pans.

Restaurant Arrea! Innovation and Tradition

Our adventure continues at the prestigious Arrea! restaurant, run by renowned chef Edorta Lamo, ambassador of the Salt Valley since 2024. Located in Kanpezu, the heart of the Alavesa Mountains, it is a new gastronomic concept with its own strongly local and autochthonous style that invokes personality, culture and local customs, and has garnered numerous awards such as First Michelin Star and Green Star, Two Suns Soles Repsol, Best Restaurateur of Euskadi, Golden T, Top 10 Macarfi Guide or the Forbes 100 Creative List.

Here, you will enjoy the Mendialdea menu, a 5-course closed menu and putxero, based on seasonality and the local market. This menu seasoned with Añana salt celebrates the essence of Basque gastronomy with a contemporary twist, highlighting local ingredients and traditional techniques.
